Two of my favorite past times before Oliver’s arrival were cooking and baking. Since his arrival in January, I’ve mostly cooked things that were easy, required little attention, and would make lots and LOTS of leftovers -we’ve been eating quite a bit of BBQ brisket and chili.
I have done even less baking in the (nearly) three months since Oliver’s showed up. I miss baking. I tried the “semi-homemade” approach for a couple of batches of cookies, but somehow it just wasn’t the same.
I’ve slacked off, store-bought carrot cake cupcakes have made regular appearances at birthdays and I haven’t made any really spectacular culinary creations in months.
This is going to change: for Easter I’m making an Oreo Cheesecake. It’s a no-bake cheesecake from Cooks Illustrated’s supplemental issue on Make Ahead Meals (or something like that).
Today I made the Oreo crust. Oliver looked on from his play yard, as I explained what I was doing: counting 30 cookies, using the food processor, pressing the crumbs into the spring form. Later in the week, I’ll finish it so it’s ready for Easter with the in-laws.
